Tikka Masala Pizza

We eat homemade pizza and Indian food weekly so I thought I would merge the two cuisines and make an "east meets west" pizza.  Since we don't really eat chicken I used salmon and the tikka masala pizza turned out crispy, slightly spicy, and full of flavor.

Tikka Masala Pizza

1. Ready made dough

2. 1 lb. chicken or salmon (cubed)

3. 1/4 cup diced onions

4. 1 cup diced red,yellow, and orange peppers

5. 1 cup ready made tikka masala sauce

6. 1/2 tbsp olive oil

7. 1 cup shredded mozzarella cheese

8. 1/4 cup of chopped cilantro

9. 1 jalapeno (optional)

10. salt and pepper to taste

Directions

1.Preheat oven to 400 degrees

2. Sauté salmon (or chicken) in a pan with a little olive oil.  Season with salt and pepper. Once the salmon is cooked add 3/4 cup of the tikka masala sauce. Reduce heat, stir for another minute, and then turn off heat.

3. Roll out the dough and place on a greased pan in the oven for 5 minutes

4. Remove the half cooked pizza from the oven and spread remainder of tikka masala sauce on the pizza, add the salmon tikka masala, onions, and peppers. Top it off with the cheese and place in over (I put it directly on the oven rack) for about 15 minutes or until the crust is brown and cheese has melted.

5. Remove the pizza from the oven, add cilantro and serve.
